Again I say go with the 6 rack.  Boar, I'm looking at getting a backery rack for a possible smoker.  They are made out of steel and come with coasters.  You will see them in backery depts. in the stores where they put sfuff to put out in the cases.  All they need is the walls, floor, and the roof.  Then look for heating elements I'd go with propane with that size and racks to slide on that fit.  Perfect for hanging sausage or get racks to lay butts ect, on.  Don't want to buy a new one and I've told a couple of stores if they get rid of any, I'd be there to take one.  good luck.

The puck concept seems like it isn't needed.  I'd bet in the first four hours of smoke I add pellets or chips once at the beginning and at around 2 hours and its good.  It's not like it needs a constant barrage of pucks firing through there.  If the puck smoker has some other benefit than self feeding then that's a good reason but if not sounds like an expensive way to smoke food.

I like using these little pellets but if I'm out I can use apple branches or cherry trim piece or oak on the burner in my cheapo Masterbuilt.   And you guys need to quit chirping each other, I'm going to tell Reb to come home from the neighbor ladies and babysit you guys if you don't.  Kids...

Boar, any of the dual probe models should serve you well.  I think when I built mine I sprung for the WSD1500, but the WSD1200 would work just fine.  Either way, money well spent!  You can pick up an aftermarket electric element to plug into this for about $40- $50 on Amazon, etc.

I talked to you about this to TL.  I may have to spring for one of these controllers with the 2 probes.  Then put an element from a range top in he smoker with the plug like on stove itself.  Then when an element burns out I can just unplug the bad one and plug in the new one.  Is that the type of element you are talking about?

LPS - The element I have is made by Brinkmann and meant for converting a gas smoker to electric or serve as a replacement element for certain brands.  This is the exact unit and here's the link.  It says there's some left in-stock but this model has been discontinued.  But there are similar ones out there.

http://www.amazon.com/Brinkmann-812-3323-0-Smokeshop-Discontinued-Manufacturer/dp/B0000AUSHQ/ref=sr_1_3?ie=UTF8&qid=1458515577&sr=8-3&keywords=smoker+element

Unless you have a hot plate that plugs into 120, you can't effectively wire down a standard stove element from 220 to a 120.  I've asked several people who know more about electricity than I do and ended up going with the device below.  It plugs right into the back of the digital unit and the digital unit plugs into your 120.  All-in-all, you're gonna spend about $250 - $300 between the two units.

But this has worked great for me - the chip tray is kind of a joke, pretty small.  I use it as an alternate tray, but re-purposed an old pizza pan to increase the chip capacity.  Both only give me good smoke for about 30-60 minutes though, so I ended up buying an 18" tube from A-MAZ-N for longer smoking durations and cold smoking.

EDIT--

And YES!  now that I see it, I'm kind of upset!  I don't think that SMD-100 was available when I bought over a year ago, it would've been a MUCH less expensive option and it looks more intuitive.  That'll bring you under $200. GO FOR IT! ;)

Oh ya I can see the 220 -120 problem with the range top element.  I have been using a cast iron pan on my elec smoker.  I use a hot plate but have to rewire it so the thermostat on it doesn't run or it shuts it off when it gets hot in the smoker and won't turn back on for a long time. They last about a year.  A friend of mine who does a lot of smoking says the cast iron pan does not warp when hot so works better as it keeps in contact with the element due to staying flat.  Seems to be a good combo.  Thanks for all of the info.

I am tired of buying the hot plates.  They always konk out when in the middle of a smoke.
