Venison Snack Sticks

Awesome work Thunder!! Great color on those sticks.  One note on the water bath.  Depending on the texture you want, giving a water bath to sticks can make the bite more tender.  Not giving the bath will give them the more "typical" bite.  Giving the cold bath is used by me for all of my smoked sausage.  It stops the cooking process, shrinkage, and of course the wrinkles [if you don't give them the bath].  But with sticks all of that goes right out the window.  I take them out of the smoker and just let them cool off in the kitchen or just open the smoker door and let them cool off there.  Then let them sit in the fridge overnight before vac packing them.  good luck.

Directions from Curlys said to run cold water over them for 5 minutes.  They were already quite wrinkly, but I figured, they were done so it would probably good to stop the cooking process. I let the air-dry and put them in the fridge overnight. Anyway - I couldn't be happier, these are AWESOME!!!  Great flavor and just the right amount of "snap!"

You did a great job on those.  Ya the water bath is personal preference with sticks, and will not hurt the flavor at all, just the texture one likes.  That's a very good stick recipe from Curley's.  I have made sticks from their polish seasoning and their formed bacon recipe as well.  Your sticks look like you have been making them for many years.  Looks like Luke as a great teacher there and will himself make some fine treats!!  good luck.

One thing that I did realize is that these things are a lot like Jerky.  You get a LOT less than what you start with!!! 10 lbs will not be enough.  I wanted to try a number of smaller batch recipes with this year's deer, but I may end up making a lot more of these.  My kids wont stop eating them and after the ice fishing trip this week, I think they're be pretty much history!

I don't know that they sell any of their stuff retail besides their own store in Iowa.  At least it's not around my area.  If someone knows a place that sells it, I'd be interested as they do have a minimum order amount for shipping. It's not terribly high but I ended up buying a meat lug to round out an order from them a couple of months ago.  I needed one anyway and they make good stuff so I was happy to give them the business.  But if you just need one thing it can be a pain.  I suppose you can always just buy more stuff as it keeps for months.

    • If you really want to treat your wife (and yourself) with a remote operated trolling motor, the Minn Kota Ulterra is about easy as it gets.  Auto stow and deploy is pretty awesome.  You just have to turn the motor on when you go out and that the last time you have to touch it.   24V 80lb.  60 inch shaft is probably the right length for your boat.  They ain’t cheap - about $3k - but neither one of you would have to leave your seat to use it all day.
    • Wanderer, thanks for your reply. I do intend for it to be 24 volt, with a thrust of 70-80. Spot lock is a must (my wife is looking forward to not being the anchor person any more).  With my old boat we did quite a lot of pulling shad raps and hot n tots, using the trolling motor. Unlikely that we will fish in whitecaps, did plenty of that when I was younger. I also need a wireless remote, not going back to a foot pedal. We do a fair amount of bobber fishing. I don't think I will bother with a depth finder on the trolling motor. I am leaning toward moving my Garmin depth finder from my old boat to the new one, just because I am so used to it and it works well for me. I am 70 years old and kinda set in my ways...
    • Dang, new content and now answers.   First, congrats on the new boat!   My recommendation is to get the most thrust you can in 24V, assuming a boat that size isn’t running 36V.  80 might be tops?  I’m partial to MinnKota.     How do you plan to use the trolling motor is an important question too.     All weather or just nice weather?   Casting a lot or bait dragging?   Bobber or panfish fishing?   Spot lock?  Networked with depth finders?  What brand of depth finders?
    • We have bought a new boat, which we will be picking up this spring. It is an Alumacraft Competitor 165 sport with a 90 horse Yamaha motor. I will be buying and installing a trolling motor,  wondering if I can get some recommendations on what pound thrust I will want for this boat?  Also, I will be selling my old boat, is there a good way to determine the value on an older boat ( mid-80's with a 75 horse 2-stroke  Mariner motor)  I will appreciate any help with these questions.
