Lot depends on the location of the venison.   That Pine County venison that lived on alder and pine boughs was pretty gamey.  I never liked it when my dad brought it home.  Moose was much better.  

Now a deer living around Rochester and strolling from bean field to corn field to alfalfa field to pea field might well be a different story.

i like to cut the loin out right away and cut it into half inch slices.  fry it fast in butter, sprinkle a little seasoning on and inhale it!   if it's all mangled up, sausage...
