Those rings look good!!! I don't always get the rings the same size.  Sometimes at the end you may not have enough casing to make the same size so it's not that big a deal.  The smaller rings I usually take two for a meal, but most are close to the same.  Ya those blowouts will work themselves out after you get the feel of stuffing.  After you put the casings on the tube do you push the casings toward the front of the tube and then start stuffing?  That makes it a lot easier.  good luck.

nope Ive been leaving them towards the back of the tube, good tip, Ive had a minor air displacment too. but it worked out, the air got trapped in the cassing and backed up on underneath the casing and the horn, and inflating the whole casing on the horn, I just pulled it off and started over.

Normally when you get a lot of air from the stuffer into your casings like your describing it's from not packing the mix well into the stuffer.  When you put mix in your stuffer, press the mix down a bit.  This will get rid of most of the air.  I also don't squeeze the end of the casing as I'm stuffing as the first sausage is coming into the casing from the tube.  THis also get's rid of excess air.  I don't squeeze the end until the sausage starts coming out from the tube.  good luck.
