ok, so ive been trimming off fat of the bear, got 10 beutiful roast off the hind quaters, and yet to do the front and torso. I trimmed off probabley 10 lbs of pure bear fat that i felt was salvageable.and a couple things come to mind, id like to render it down and use the oil to cook with, or, im gone make some polish bear sausage, and want to use some of the fat in the mix for flavoring, Im gonna use straight bear meat, instead of a pork mix, why cause bear is of the swine family.  so that in mind i want a little fat in it, so say i make a ten lb batch of sausage, im wondering how much fat i should add. or any really. People add pork to deer because of the leanness of venison, bear is also lean with its fat on the outside, unlike an actual pig. so I figured Id add some of the fat for grease content. any thoughts on this??

Boar I have no experience with bear fat.  I use pork butt for everything.  Pork butt would be my choice.  Have you tasted bear fat at all?  Have you made bear burger with adding bear fat?  If you liked it , it should be fine but I would make a small batch first with bear fat to see how it goes before you make a larger batch and possibly be dissapointed.  

 

Here is my take on adding pure fat of any kind to sausage.  It is done often and you will see this used in places that process venison for hunter.  Profit margin motive instead of quality but they are in buisness to make money.  Not saying it's a terrible thing but it's not for me.  I like to use pork butt myself.  It gives the sausage added flavor and added MEAT and not fat.  Pork butt by itself has over 35% internal fat anyway not counting fat cap.  I know beef fat is used as well in venison sausage, but again that's not what I would use.  Percentage of pork butt to bear or venison depends on what type of sausage you are making.  good luck.

I hear ya, I guess what im after is some fat content to the lean meat, not adding fat for weight or to make the required amount of weight per recepi. I love bear burger, and the bear fat is very similar to pork fat, I use boston butt added to venison for flavor also but but there is a certin percentage of fat in the pork shoulder when cubinng it up for the grinder. as tot he deer fat question, that is tallo not fat. as far as im concerned. and I dont allow any in the sausage i make. Impretty sure i know what im gonna do but was just curious on the fat issue, I'll probably just end up either usin all bear or add some pork. I'll think on this some more. thanks guys.

Not trying to be a jack wagon, but just sharing info.  Bear are NOT closely related to Swine family.  They are much closer to the dog family.  Sorry!  If you don't believe me, feel free to Google it yourself or you can refer to this link which provides a good explanation:  http://environmentalaska.us/black-bear.html

nope ur fine, apprently a very comon missconseption, i thrive on the info and thanks for sharing. althou now not closely related to swine, but only classified in canine line, primarily cause of paws and teeth. neat when ya think about it. thanks for the education.

 

ok so what should i do with all this dog fat, bky cant wait to tear into those dog roast's  who wants to go ice fishing? ill bring some dog sausage........nope that dont work. back to swine.... lol!

Boar the dog...... no that wontnwork either.
