anyone ever make Turkey(pheasant) jerkey?

It depends on what type of dehydrator you have. I would make sure it goes to at least 165. Cooking birds any lower than that is a risky adventure. If your dehydrator doesn't go to 165 you can always use your oven.

Do a quick google search on turkey jerky and you will find all sorts of recipes. I've never tried it because I have way to many recipes to cook pheasant and reserve the jerky recipes for goose breasts. I've made goose jerky in my oven with great success.

Good luck!
