Just wondering if any advise for how long to cook them or how much smoke to use. Thanks everyone this is my first time smokeing ribs. eyeguy 54 Posted August 25, 2013 Share Posted August 25, 2013 3-2-1 method should work great. I like to mix 1/2 apple and 1/2 mesquite. I fill the tray 2 times during the first 3 hours. (Not from the side chute) Normally i just put the rub on, let the smoker warm up to 225, then in they go. Have fun. There is a thread on it if you need lottsa info. harvey lee Posted August 25, 2013 Share Posted August 25, 2013 Make sure to remove the membrane off the back side of the ribs, they will be much more tender and not so chewy.I use the 3-2-1 but I go 2.5-3-.45 minutes. Seems I get tenderer ribs using the spare ribs. My BBq sauce goes on about the last 15 minutes or so until it carmelizes. Much longer and the sauce will burn do to the sugar content.I like to use apple and some times I use cherry for a different smoke flavor. I do not smoke them heavy at all. leechlake Posted August 26, 2013 Share Posted August 26, 2013 ottermannext time mix up a pan of baked beans with whatever you like in em and the last two hours put them below your ribs for "drip beans" they are fantastic and you aren't heating up the house. Add a bit of liquid from a coke or beer so they don't dry out too much and stir them a few times to get the smoke throughout the beans.
