I played hookey from work last week and smoked 7 fillets this weekend. This batch was seasoned with cracked black pepper and garlic pepper and smoked using hickory.... I know what you are thinking hickory???, it's weird but I tried some hickory smoked fish last year and really liked it. You just have to be careful with the smoke.
