I have a buch of bear burger being ground with half pork, Oh Boy! I pacaking it in two pound increments. Anyone have a breackfast sausage recipie Where I can just take a couple bags out an mix with seasoning an smoke a couple of fatties in the smoker.

check out the Venison Sausage Recipes for the Adventurous soul thread on this forum should be on the first page or second. lots of recipes on there. you may have to adjust the amounts accordingly for smaller amounts. you can also buy premixed at most stores. Cubs has some i know. they are 8 oz. pacs designed for 25 pounds. so you can adjust that also. good luck.

i havent yet. when it calls for cheese i use the shredded stuff in the dairy dept. it melts during the cooking proccess but the cheese flavor is there. i know the Thirdeye recommends it and it does do the job. i know you can get it on line. i will use it at some point but right now it's the shredded stuff for me.

one thing that is important in making sausage in my opinion is to add 1 cup of dried powdered milk per 5 pounds of mix. all of the sausage i have made using this [including with cheese] had very little drippings if any during smoking. good luck.

Another option is to go to a meat market and buy the spice mixture from them. I have a market in my neck of the woods that makes a real tasty breakfast sausage and I just go there and have them mix me up a batch.
