Mrs Boilerman Posted August 13, 2012 Share Posted August 13, 2012 I planted mint this year, just for fun, and I have a ton of it! Anybody have ideas for using fresh mint? Besides mojitos, ha ha! I've gotten a lot of suggestions for that. I have so much basil, lemon basil and mint that is just sitting out in the garden! Walleyehooker Posted August 13, 2012 Share Posted August 13, 2012 I take my Basil leaves and put them in a chopper with olive oil and blend then freeze it in ice cube trays. LABS4ME Posted August 13, 2012 Share Posted August 13, 2012 I make this mean 'greek' dish... do it all the time, simple too.Season 2 chik breasts with Cavenders Greek seasoning (buy it next to salt and pepper in groc. store) brown in olive oil Remove breast from pan and add a bowl of cherry or grape tomatoes cut in half. I guess I pick what is ready... cereal bowl size works. I think the clear cherry tomatoe packages in the strore are a pint and they work perfect.Saute with some onion and garlic ( 1/2 large onion chopped and 3-4 cloves garlic) till all is oftened. Add some salt and fresh cracked pepper. If I have a fresh small zucchini or yellow squash, I will cut into small 'fries' and add them to this mixture.Add in the fresh sqeezed juice from one lemon and 1/2 cup of fresh mint chopped. Stir into sauce mixture. Sprinkle feta cheese over the top (to your liking) and cut chik into strips and lay on top of cheese. Did up some tonight with all fresh form the garden cucs, onion, garlic, yogurt, lemon juice, mint, oregano, salt, pepper, and instead of sugar, stevia, also from the garden.
