Ideas on making a great Pastie !!!

I think you can try almost anything in a pastie and I may even try some different things next time instead of just the traditional way. I have also bought a few from that little place in Grand Rapids and they were good. The thing with individual ones you get a lot of crust. I like to make mine in a bakeing pan as I like more meat and potatoes etc. and less crust. I am also a ketchup guy but gravy is good to and sometimes use both at the same time.

remember the great kraut dinner LABS4ME had in another thread. well that gives me ideas for pasties as well. think about it.

he had pork ribs [i'm thinking pulled pork seasoned but without the bbq sauce]

he had onions and garlic [no changes]

he had smoked hocks or smoked shank meat [i'm thinking the pulled pork may be enough but i would put in the canadian bacon that i made]

he had red potatoes [no changes there]

he had smoked kielbasa [i would go with that or brats]

he had krout [i would go with my german kraut/bacon]

now this would be for a patsie, his original recipe for the dinner is the best i have ever had. only thing i did different was that i used my German kraut with the bacon. [having that again soon]. now i have to make a good crust and i will go with the past posts on that. good luck.

Pike - I hope you see this here. I couldn't respond to your PM as I guess there is a limit to how many back and forths that you can have. Jeez, we only responded to each other twice. Anyway, I'm glad you got a chance to talk to Robert and I'd be a salesman for Zups anytime. For free. smile

When you and your family get ready for that road trip to Ely, let me know and I'll point you in the right direction of where to stay, eat, what to do, where to fish (if thats on the agenda) ect. Careful, your 18 month old will be 18 years old in a blink of an eye.

LOL!!!the crust is my biggest problem along with the proper moisture within. i'll give it a try but i'll bet it will be good once i get it down. Labs gets all the credit. heck, i gave the people up north his recipe on this thread and the kraut heads love it. they all tweaked it a little but not much. good luck.

If the Kraut Heads Up Nord love it....ITS GOTTA BE GOOD! This fall I'll have a dock pulling party (good excuse as any to get my buddies together)and will have to put Labs concoction together. It looks soooooo good!

Leaky, The wife and I are doing a day trip to Ely at the end of the month so I could use some suggestions on where to eat and what to do and see. Not going to fish,just going to shop and look around for a day. Will have a couple bicycles with as the Range bike trail runs by my place near hibbing. Would it be worth takeing bikes to Ely to get around or better to just drive around and shop etc.

The Grand Ely lodge has a great bar/restaurant over looking the lake. (one of my best friends is the food and beverage manager as well). If you go there, let me know and and I'll get you two introduced to each other. My wife and I stayed there for our 20th anniversary and if you could manage an overnight, you wouldn't be dissapointed. You could unload your bikes there and hit the paved trail that goes around miners lake. Nice ride!

If you like Italian, Sir G's in town is pretty tough to beat. The Chocolate Moose is very popular. The is also a brand new place called Taste of Ely. The Klun family owns it and service up some great, homemake "range" dishes.

Of couse, bring a cooler and pick up some potato sausage, pasties and a porketta roast at Zups. Want something different? Pick up some Mock chickens legs and slow cook them on the grill.

If you know anything about Dorothy Molter (or even if you don't) check out the Dorothy Molter Museum. She was the last person allowed to live in the BWCA and her orignal cabin is on disply on the edge of town. I also know the tour coordinator. She is extremly knowagable and you would want to go at a time she is working. I could find out what her schedule is.

For you and your wife, it would cost 100 bucks, but a float plane trip over the area is a fantastic experience. Would need to book in advance. They would pick you up at The Grand Ely Lodge's dock. Took my wife and daughter up last summer to see all my fishing spots and my Mom's house from the air.

If your wife likes to shop, you can easily spend an afternoon seeing some pretty cool stuff. Maybe treat yourself to some Steger Muklucks or moccasins.

Personally, I would skip the Wolf Center, take a drive out to Fall Lake campground and hope to see a live one running down the road.

Typing this up gave me thought to a spot on the radio I heard back when Charles Kuralt bought the finacially distressed local station. He loved Ely. Think of Chuck's booming voice saying thing this (If you never heard him speak, Utube him):

"We are Boundry Water Broadcasters and this is Ely Minnesota. One of the 2 nicest places in the Universe. The other one? Well...............we havent found that yet."

He wrote a book about his 12 favorite places in America and one chapter was Ely. I have it on cassette tape (imagine that) and make our crew up on Burntside in September listen to it every year after the fish are cleaned, we are cleaned after a couple hours in the sauna and a belly full of food. That quiet time before everyone passes out.

Walleye, If your into waterfalls about a mile before the Fall Lake campgrounds just as you cross the Garden Lake bridge on the left hand side there are the Kawishaway Falls sp that run into the Fall lake power dam. It's a nice short hike and a pretty good set of falls if the dam is running.

Rhienhard, to help control your moisture inside of the pastie, par boil your potatoes, dice small and put on cookie sheet in oven for 5-10 minutes...

The kraut, run under cool, clear water for a minute. let sit in collander for 30 seconds and then begin to 'press' out remaining liquid with paper towels (they used a kitchen towel in the old days). You can really make it fairly 'dry'. My great aunts did this when making pierogies...

All this talk by Leaky about the Ely area makes me want to move up there. wink

If your in the cities and want to try a porketta get one from Cosseta's in St. Paul on West 7th ST. They have been making them a long time and IMO are real good. I don't know how they compare to Zups but I will find that out real soon.

if that's the one that was bought at cubs it could be the seasoning but i'm familiar with the seasoning we used when i worked for cubs but i worked at a franshise cub so we used something different. but both seasonings were decent.

porketta roasts should be made from a pork butt in my opinion. some places use boneless pork roasts as well. those are way too lean for that. also most places just coat the outside with the seasoning. i used to butterfly the roasts and coat both sides and roll them back up and tie them back together or put a cotton netting over them.

try making your own once. i have the seasoning recipe in this thread. buy a boneless butt and go for it. good luck.

That is the way Cossetta's makes them. Here is a pic of Cossetta's porkettas that I cooked up at work.

On the way home, take the Echo Trail from Ely over to Orr. 50 miles of winding dirt road with lots of wilderness. You can hit the Zups in Cook, and swing into F&D in Virginia for some porketta seasoning.

Went to Ely this weekend and I must have driven by this place 1,000 times over the years. Finally decided to stop and pick up a couple of pasties on the way home. Its K & B Drive in just off of 53, south of Eveleth. They also have a smoker and sell brisket & pulled pork. Didn't try it, but sure smelled good.

The pasties rivaled anything I've had up there. Very moist and for 4 bucks, a great meal when I got home. They even put some ice in the cooler for us. Looks like this will start being a regular stop (alnog with Gordies in Cloquet)on trips up or coming back.

Of course had to load up the cooler with "Ely Food" from Zups. Potato sausage on the grill tonght, mock chicken legs tomorrow and a porketta next weekend.
