Chipotle Dipping Sauce?

Does anyone have a recipe for a homemade chipotle dipping sauce (like a mayo or sour cream base)?

I'd like to use it as a compliment to a fish fry over the 4th, kind of bored with the plain tartar sauce.

I thought I saw a recipe on one of the threads at one point but it had to be more than a year ago. There's a few recipes out there when you do a Google search but I trust the folks on this forum more than the recipes for the masses. grin

I may have some recipes at home. I have a flshdrive with about 1800 recipes on it for tons of different things. I will search around later. You may want sign up on the BBQ brethren site, if you enjoy BBQ'ing/ smoking/grilling that place is great & everyone is great. It is very similar to this site as in, if you post a question, you will probably get a ton of answers. I have learned a ton from that place & some great recipes. 2c

You could just buy those little cans of chipotle in adobo sauce and chop em up good and mix with some sour cream, salt, pepper, and a some fresh lime juice.

Warning - each brand is diff, add some peppers and taste, add more if needed.

p.s. - this goes great on Fish Tacos...

Or roast on the grill some chipotle, serano, or anahiem peppers. Blister the skin then put them in a covered container. Come back 10 minutes later and clean off the blackened skin, stems, and seeds. Chop these up and use instead of canned... grin

Simple Chipotle Dipping Sauce

1/3 c. mayo

1/3 c. sour cream

small bunch cilantro, minced

2 chipotles in adobo (or to taste whistle) , pureed

juice of 1/2 lime

Combine the sour cream & mayo in a small bowl. Puree the chipotles in a blender and fold into the sour cream & mayo along with the fresh lime juice. Mince the cilantro and fold it in. Cover & refrigerate for at least one hour in the fridge to allow the flavors to blend before serving.

some of the cans of chipolte can be way hot. good luck.

Good point, will usually just start off with half of one and go up from there. If you like it on the milder side, can just use the sauce in the can for the heat and flavor.

I make stuffed pork chops with pork sausage and chipotle. if your not careful they will burn you right out of the house due to the heat. I work with guys who will bring a can in open them and eat them right out of it with lunch. Whole darn office smells like them but they just chomp away. Same with serranos and jalepanos just right off the plant.

+1 That is about exactly how I do mine....well that and a little green onion and a lot of garlic wink

I always add a couple of smashed cloves too, pb. Can't give all my secrets away, though... dammit', I did it again blush!!!
