Leaky Posted March 23, 2012 Share Posted March 23, 2012 Tomorrow the dock is going in and a couple of racks of ribs will go in the smoker. I'm always trying to get ideas for side dishes. I'll fire up the grill to finish the ribs and put this together in foil packets and throw them on about a half hour before saucing the ribs. This is an interesting twist on regular potatoes and onions in the foil - got great reviews so I'll give em a shot:1/4 cup mayonnaise1 tablespoon grated Parmesan cheese1 garlic clove, minced1/2 teaspoon minced fresh parsley1/4 teaspoon salt1/4 teaspoon paprika1/4 teaspoon pepper2 medium baking potatoes, cut into 1/4 inch slices1 small onion, sliced and separated into rings2 tablespoons butterWhat types of sides do you guys like when your outdoor cooking. I think I'll also just doctor up a can of Bushes Grillin Beans with bacon onion & a little brown sugar. Maybe a salad topped with some chopped up smoked eggs? reinhard1 Posted March 23, 2012 Share Posted March 23, 2012 this weekend we are also having ribs. we will have sweet potatoes grilled in quarters just the way they are with the skin on, asperagus [cubs has them for 1.48 till tommorow] rice and cucumber kimchi on top of the rice. good luck. KEN W Posted March 24, 2012 Share Posted March 24, 2012 Grilled veggies in a grill pan......broccoli,cauliflower,carrots,zuchinni,asparagus,brussle sprouts,green beans,potatoes,and yams.Cut into bite size peices.Sprinkle on olive oil and Italian Seasoning.Remove the broccoli and put the rest on the grill.When about half done add the broccoli back in.Otherwise it tends to burn by the time the veg chunks are done.For a different taste.....add olive oil,soy sauce and oriental seasoning. nofishfisherman Posted March 25, 2012 Share Posted March 25, 2012 One of my favorite side dishes with almost any meat is a roasted or grill root vegetable mix. I use sweet potato, parnsips, carrots and rutabaga. Just cut into chunks or cubes, toss them with some olive oil, salt and pepper and then either roast them in the oven or put them in a foil pack on the grill.If you do the foil pack i like to give them some direct heat out of the pack towards the end of their cooking time because i like them to get a little crisp to them.Its really tasty and pretty healthy. j_pallen Posted March 25, 2012 Share Posted March 25, 2012 I always like grilled or baked beans to go with my good rack of ribs! it compliments the barbeque flavor so well that it enhances the flavors in it making i"m more delicious for me.It is also very easy to make whether baked r grilled so it doesn't consume me much of the time.
