curing time

Hey guys quick question.

I put 4 pounds of ground beef in the seasoning and cure last night around 7.

Do I have to cure for 24 hours? I want to head out at noon to do some fishing and was hoping to start the batch on the dehydrator before I left and then it would be pretty much done when I got back around 6. It would be about 17 hours in the cure. I guess i could wait until around 6 tonight to put them on...and then be up until midnight - which I probably will be anyway...but just wondering.

go ahead and go fishing. i just leave mine overnight. usualy make the stuff in the afternoon and leave it overnight and then make it the next day. ground and mixed my old fashion franks mix yesterday will be stuffing it soon today. have fun out on the ice. good luck.

Finished this last batch up tonight. All vacuum sealed and ready to send off to my son at school. Very flavorful. I just did the Hi-Mountain Pepper and garlic. I then added 1 tablespoon of Liquid smoke mesquite - for each pound of 90% lean ground beef. (4 tablespoons and 4 pounds).

Real good batch.
