reinhard1 Posted August 15, 2011 Share Posted August 15, 2011 i came accross some information on a variety of ways to batter fry things you probably never thought of. in the spirit of state fair anything on a stick here are some.How To Fry: heat 3 inches vegetable or peanut oil in a large deep pot over medium-high heat until a deep-fry thermometer registers 375 deg. [or heat the oil in a deep fryer] make a battter [see below]. working in batches, dip your ingredients in the batter, lit the excess drip off and carefully lower into the hot oil, fry. truning as needed, until crisp and golden.Basic Batter: whisk 1 cup flour, 1 teaspoon baking powder, 1/2 teaspoon salt and 1 cup cold club soda.Thin Batter: make basic batter with 1 1/4 cups club soda.Egg Batter: make basic batter with only 3/4 cup club soda, add 2 egg yolks.here are some of the things to try the batter on:Oreo cookies- use basic batter mixed with 1/2 teaspoon ground cinnamon and 1 tbls sugar-fry two to three minutes.mixed nuts- use basic batter mixed with a pinch of cayenne or curry powder. fry about 1 minute.cheesecake- cut cold cheesecake into pieces. use basic batter mixed with 1/2 tsp ground cinnamon and 1 tbls. sugar. fry 4 to 5 minutes.mac and cheese- spread mac and cheese in a baking dish; chill and cut into squares. use basic batter mixed with a pinch of cayenne. fry 1 to two minutes.have any ideas? more to come. good luck. Jim Almquist Posted August 15, 2011 Share Posted August 15, 2011 One of the things that always has been a hit is potato chips. All you need is a slicer that can make your potato slices real thin. Dylan33 Posted August 15, 2011 Share Posted August 15, 2011 Deep fried some baby dill pickles over the weekend. batter was flour, salt, onion powder and some ground up goldfish crackers. reinhard1 Posted August 15, 2011 Author Share Posted August 15, 2011 i've tried french fry style potatoes but not sliced as you say. your method sounds a lot better. here is another one with potatoes in mind:Mashed Potatoes:chill mashed potatoes and roll into balls. use basic batter mixed with 2 tablespoons chopped herbs. fry two to three minutes. good luck. Just need to put them on some paper towels and salt and there ready to eat.If you like onion rings and good dip for them try 1 part mayo, 1 part sour cream and horseradish to taste and a dash of garlic salt. reinhard1 Posted August 15, 2011 Author Share Posted August 15, 2011 Jim, i'm loosing weight believe it or not. i was 245 couple of months ago and now 222. your not helping any , but look at me posting fry stuff. my wife and i do go off the program on weekends and the chips, and onion rings will be on the agenda this weekend with the grandkids. talking about waistlines here is another: Snickers- freeze snickers bars. use egg batter mixed with 1/2 tsp. ground cinnamon and one tbls. sugar. fry 2 to 3 minutes. good luck. reinhard1 Posted August 18, 2011 Author Share Posted August 18, 2011 ZUCCHINI CORN FRITTERS:2 medium zucchini, coarsely shreddedkosher salt1 tbls unsalted butter1/2 small onion, finely chopped1 clove garlic, finely chopped2 ears corn, kernels cut off1/2 cup yellow cornmeal1/2 cup all purpose flour1/4 tsp baking sodafreshly ground pepper3/4 cup buttermilk1 large eggvegetable oil, for fryingtoss the zucchini with 1/2 tsp salt in a bowl; let stand 10 min. wrap the zucchini in a kitchen towel and squeeze dry. meanwhile, heat the butter in a large nonstick skillet over medium high heat. add the onion and garlic and cook, stirring occasionally, until slightly softened, about 4 minutes. add the corn and cook, stirring occasionally, until crisp tender, about 3 minutes. set aside.whisk the cornmeal, flour, baking soda, 3/4 tsp salt and 1/4 teaspoon pepper in a midium bowl. whisk the buttermilk and egg in a large bowl, then stir in the corn onion mixture and zucchini. add the cornmeal mixture and stir until just combined. heat about 1/8 inch vegetable oil in a large nonstick skillet over medium heat.working in batches, scoop scant 1/4 cupfuls of the batter into the oil and use the back of the measuring cup to flatten the scoops. cook until the fritters are golden brown, 3 to 4 minutes per side. drain on paper towels and sprinkle with salt. serve warm or at room temp. [you can make the fritters up to 2 hours ahead; reheat in a 375 deg oven on a rack set on a baking sheet.] i have also added minced jalopenos to half my mix for those who like the heat. good luck.
