beef jerky

Looking for a good hamburger jerky recipe. I did a batch last weekend with High Mountain Sweet and spicy. It turned out good but I was wonering if there is one that someone has that is great. Home made or store bought. I have about 10 pounds of burger in left from last years cow. thanks

Funny you should ask.

I did google searches a couple weeks ago for hamburger jerky and took ideas from about 6-8 different recipes and made my own recipe up from scratch.

I have had several people try it, and I have gotten nothing less than 1 3/4 thumbs up. laugh

I wanted something sweet, yet spicy(or with some zing). It fit the bill.

It looks like a lot of "stuff" but when its all mixed together its not as much marinade as you might think.

I will add, that my wife disgarded my written down recipe, so I had to go off memory and review the recipes I googled to put the recipe on paper again. Try a small batch and see what you think. I am confident I got it 90+% right. smile

I put on the dehydrator at 160 degrees for about 2 hrs or so. I did sprinkle some extra spices on the jerky before cooking too, in order to get some added "bite".

Hamburger jerky

4 lbs hamburger(or whatever ground meat)

1 TBSP brown sugar

10 shakes of tobacco

2 small cloves of garlic pressed or dice very fine

2 tsp black pepper

1 TBSP crushed red pepper

1/2 cup soy

1/4 cup worchestire

1 TBSP seasoned salt

2 TBSP water

1 TBSP liquid smoke

1 tsp cayenne

1/4 cup hoison sauce(this is like a teriyaki sauce)

1 TBSP tenderquick

2 tsp onion powder

this one sounds great. do you let yours sit awhile in the fridge and let the flavors blend in or press them and set them in the dehydrator right away? i have been using wax paper on the burger to roll them flat and thin. thanks for the reciepe. good luck.

I have always let my hamburger jerky sit in a bowl in the fridge for a while. This batch was about 12+ hrs in the fridge. I mixed it late one night and put it on the dehydrator mid the next day.

Then I use a jerky gun.

maby i better "modern up" and get one of them guns myself. always look and walk by them. thanks again. good luck.

My wife finally convinced me to get one of the guns a couple of years ago. Until then I had resisted. I tell you what, I should have purchased one long ago. They are fantastic. Making jerky is easier now and we find ourselves making it more often.

My advice: get one! I don't think you will regret it.
