I learned that something prepackaged is consistent and they have done their homework. I buy all my stuff from Curleys Sausage out of Iowa. reinhard1 Posted June 18, 2011 Share Posted June 18, 2011 in all the years of making fresh sausage the best pre-mixed sausage seasoning in my opinion can be purchased at Hamms Butcher Supply. here is a reciepe you can make at home:VENISON AND ONION BRATWURST WITH WILD RICE1 cup whole milk2 eggs, lightly beaten1/4 cup bread crumbs3 lbs venison2 lbs pork butt5 tsp salt1 1/2 tsp. white pepper1/2 tsp. ground cloves 1 onion chopped1/2 tsp. macei use a 12 oz. package of wild rice for 25 pounds of sausage, so use accordingly per poundage of sausage made.cook the wild rice until done let cool. mix the milk and eggs and seasonings and soak the bread crumbs in the mixture. combine the venison and pork and grind once through the course plate. mix all ingredients except the wild rice into the meat mix real well. grind through a fine plate. put the wild rice in the mix and blend in well. now stuff in casings or make patties. good luck.
