Any to share? Tried a new one last night with a head of red cabbage. Cut up six slices of bacon into one inch pieces, fry up in a dutch oven, add a sliced red onion with a tablespoon of olive oil, fry a bit more, add chopped cabbage and stir, salt and peppering throughout, pour in one can beer, add two bay leaves and stir. Slide it into the oven covered at 350 for 45 minutes. Good eats!

I'm not much of a cook but I do like the crock pot. This recipe is a favorite.

And easy.

Unstuffed Cabbage

1 pound lean ground beef ,turkey or chicken

1 cup chopped onion

1 can (14.5 ounces) stewed tomatoes

1 can (14.5 ounces) fire roasted tomatoes

1 - 3 oz can tomato paste

1 - 14.5 oz can water (rinse out other cans with it)

2 tablespoons packed dark brown sugar

small to medium head cabbage cut into 1-2 inch pieces (bite size)

1 ½ cups uncooked minute rice

1 cup water

In a large skillet over medium heat, brown meat and onions

Mix in other ingredients

In 5 - 6 qt crock pot on high for 2 hours then low for 2 hrs, let sit for ½ hr.

Times may have to be adjusted because my crock pot seems to run a little hot.

I think I use to run about 3-4 hrs on high with the old pot.If it's kind of runny

add a little more rice, it should end up solid enough to eat like a hot dish.

Polish Haluski, pronounced ha-lush-ki is a traditional favorite in my family.

There are a ton of variations but a traditional one is simple

Cabbage, onion, bacon, salt, pepper, and egg noodles... cool

Get some bacon starting in a big pot/dutch oven type vessel. One pound is about right for a good sized head of cabbage.

As the bacon is about done add in one large sliced onion and your cabbage sliced. We usually slice it like you would for coleslaw but not as fine, maybe 3/4 of an inch or a tad bigger. Add a bunch of salt n pepper, stir, turn down the heat to a med-low, and cover. Let this steam/cook stirring occasionally for 20-30 minutes.

It will cook down and get nice and tender. Might need some more salt and pepper...

Cook up a pound of wide egg noodles and toss it in with the cabbage along with a stick of butter.

Thats it, simple and delish. Goes well with a ring of kielbasi... grin

If anyone has ever been to Nebraska, they have likely driven by a Runza restaurant. I make these once a month usually, because they make excellent leftovers for lunch.

Runza

Ingredients

4 1/2 cups all-purpose flour, divided

1/2 cup sugar

2 (.25 ounce) packages active dry yeast

1 teaspoon salt

3/4 cup milk

1/2 cup water

1/2 cup shortening

2 eggs

FILLING:

1 pound lean ground beef

2 small onions, chopped

4 cups chopped cabbage

1 teaspoon salt

1/2 teaspoon pepper

Directions

In a large mixing bowl, place 1-3/4 cups flour, sugar, yeast and salt. Heat milk, water and shortening to 120 degrees F-130 degrees F. Pour over flour mixture; add the eggs. Beat with an electric mixer on low until blended. Beat 3 additional minutes on high. Stir in the remaining flour; knead until smooth and elastic, about 6-8 minutes Place dough in a greased bowl; cover and let rise in a warm place until doubled, about 1 hour.

Meanwhile, brown beef and onions in a skillet. Add the cabbage, salt and pepper; cook until cabbage is wilted. Punch dough down; roll into 12/6-in. squares. Top each square with 1/3 cup meat mixture. Fold into triangles. Pinch edges tightly to seal and place on greased baking sheets. Bake at 350 degrees F for 20 minutes or until golden brown. Serve hot.

Cabbage Hot Dish

Take the biggest roaster you have and chop the cabbage into it, it bakes down. Brown burger and onions, spread over top. Also can of tomato soup and can of kidney beans. Salt and pepper to taste. Stir. Bake at 350 for 1.5/2 hours, stir once halfway thru. Simple and good. If your roaster is big enough, use two pounds of burger and two cans tomato soup. One of my favorates when the garden is producing cabbages and onions.
