fishinchicks
Looking for different marinade recipes for pork. Mainly for chops right now. I typically use a soy sauce based marinade that is really good, but I would like to try other flavors. It has to be pretty mild, due to hubby's tender tummy. RebelSS
I like to marinate thick piggy chops in real apple cider, the kind that should be hitting the stores about now. You can mix in about a 1/4 cup 57 sauce, and some of your favorite seasoning. I then put apple cinnamon applesauce on top for a light glaze, rub it in well. Somewhere on this site (Last year)I had a recipe for an apple roast I make...pretty much the same thing.Easy on the tender tummies!
goblueM
its not a marinade, per seBUT, look into dry 'brining' your pork. it takes to it very well and results in really juicy, flavorful meatjust throw some salt, a bit of sugar, your favorite spices together and rub on the meat, let it sit for a few hours in a plastic bag in the fridge, rinse, pat dry, and cook!easy as pie
fishinchicks
goblueM- I prepare my roasts using a dry rub method, but haven't done it with the thinner cuts like chops and steaks and ribs. I'll have to give both suggestions a try. We are due to butcher again soon, so I'm trying to use up the last few packs of chops, ribs, and roasts. I am hoping to get down to just bacon before the next hog goes in.
Deitz Dittrich
I got this from a great friend of mine.. with any mar. no real need to measure.. But a cup of low salt soy sauce.. cup of EVOO. Can of Coke. 2 cloves of Garlic, and whatever fun herbs you may or may not have on hand. It will give it a Teriyaki flavor to it.Honey mustards also do very well.. This is the very best I have ever tried.. it was posted by Kdog partway down this post.. i have made it many times now, and all have LOVED IT!>. kudos again to kdog!, ,, here is a quote from his post. I take NO CREDIT FOR THIS.. just the fact that I have ate it till I hurt!! I have used it on chops, tenderloin, ribs.. Quote:Buy breakfast (thin) cut boneless pork chops. Marinade for a few hours in: 1/4 cup olive oil, 1/4 cup soy sauce, 2 t. mustard (dry or wet), 2 T. honey, 2. t. garlic powder, 1 t. fresh ground pepper. Throw on grill for maybe 2 minutes per side. ... Every time I've served this to guests, they've asked me for the recipe. It will work on any type of pork chop, but the thicker the chop, the longer you should let it marinade. One last thing - I poke each chop about 6 or 7 times on each side with a fork to allow the marinade to penetrate better. The marinade should be good for one "family package" of chops, however you will need to move the chops around some while marinading for even distribution. Dark Cloud
Lemon Garlic Pork Chops I use the thin ones Like Deitz or I buy regular ones and filet em in half. Then I like to pound them with a meat mallet a little to even em out and tenderize a bit. Now marinate them a day or two in roughly A 1/2 cup olive oil 1/2 cup lemon juice 1/4 cup vinegar - i like white wine for this 4-5 cloves of garlic chopped and mashed a bit some salt and black pepper - probaly a teaspoon of each a tablespoon of honey and a fav herb if you like - tarragon, basil, rosemary, ect... Something spicy thrown in there works too - redhot, cayenne, ... wisk it all together and pour over meat... Grill on a high heat for a minute or two on each side. kdawg
Best chop marinade I've ever had anywhere is from my mom: 1/2 cup oil, 2 T honey, 1/4 cup soy sauce, 1 T dry or wet mustard (not the spicey mustard - the plain stuff), 1 t of pepper, 1 t garlic powder. I use thin chops and poke each one with a fork about 5 times to help the marinade sink in. Flippin' delicious. Ooops. Just realized you already have a soy sauce based recipe. Well, here's another to try.
