Dark Cloud Posted August 17, 2010 Share Posted August 17, 2010 Slice them into 1/2 inch rings or lengthwise. Then I usually just brush em with some olive oil or hit them with a little spray butter. Then some salt, pepper, and garlic powder - not much of any one. Onto a hot grill for 2-5 minutes per side, depending on soft you like em. They do continue to soften after taking them off the grill. I do also like sliced and marinated in Zesty Italian or Robusto Italian dressing prior to grilling throw cut zucchini in a ziploc for about an hour in the fridge just hit with some pepper before putting on the grill. KEN W Posted August 17, 2010 Share Posted August 17, 2010 I like it mixed with other veggies,like yellow squash,carrots,broccoli,cauliflower asparagus,potatoes,sweet potatoes etc.Cut into bite sized pieces.Put on some olive oil,then Italian Seasoning.Or mix together olive oil,soy sauce,a little sesame oil,garlic,a little ginger.Marinate for an hour or two.Get yourself a grill pan.....$4-5 at Menards.Works great Quote Link to comment Share on other sites More sharing options...
