I always use alder for fish.

Alder and maple, but I have used mesquite in small amounts as a filler when running low on the above two with no averse effect on taste.

White oak is the norm, but any oak will do. As mentioned, maple is good too.

I dont care for cherry or mesquite. My favorite is apple.
