Maybe an egg and butter wash.I am sure you could use anything that would get the cheese to stick to the fillets. Something with a little fat, and a little salt (although the cheese will have enough) to help them brown well.Tarter sauce?Sour cream?Check out a good cookbook for home made condiments, I bet you could use pretty much anything with a little fat in it. Is there anything else that i could rub on the fillets beforehand? I think egg would work the best. Scramble a couple of them real good with a couple table spoons of milk.
