Deitz Dittrich Posted January 19, 2009 Share Posted January 19, 2009 Give this a try.. you will not be sorry.. Fillet fish..lightly coat with Mayo.. I just dig in with my hands and put a gob of mayo on my hands, and then rub the fillet down.Place on a baking sheet and salt and pepper the fillets..Then sprinkle a healthy covering of Parmisean (spelling) Cheese.. Real stuff, not the stuff in a can.Broil for 8-10 mins or until cheese is melted and brown and fillets look done.. AWESOME!!!! Quote Link to comment Share on other sites More sharing options...
riverrat56 Posted January 20, 2009 Share Posted January 20, 2009 Deitz, how thick do you layer the Mayo on the fish?Here's another one to try when fishing wasn't quite so good, it will help to stretch the fish-Slice 1 medium yellow onion and 1 medium potato per person into 1/4" slices. Alternatly layer potatoes, a few onion slices, and perch (or other panfish) fillets in a square or rectangle glass baking dish. After each layer of fish place a few small pats of butter as well as some Lemon Pepper or Black pepper if you prefer. Continue layering the fish/potatoes/onions until dish is full, top with your favorite breadcrumbs mixed with some melted butter. Bake at covered at 350 until potatoes are tender! Dark Cloud Posted January 20, 2009 Share Posted January 20, 2009 I have a twist on Deitz D's recipe that I bake panfish in often... Instead of mayo I use lite ranch dressing then when I lay them on the bakeing tray I sprinkle on a mixture of Panko breadcrumbs and parm cheese.
