musky5555
Can anybody give me step by step instructions how to pickle various foods, such as, eggs, northern pike, etc? Otherwise, point me in the right direction for instructions? I've checked a little on-line, but apparently "grandma's method" isn't safe, and it's hard to find any quality instructions.Any input would be appreciated... Windy City Walleye Hunter
Musky,Go with the recipie that was originally posted by coldone. It is a winner for pike, I tried my first batch this year and have a jar and a half left. The pickling solution tastes just like the stuff you get in the store bought pickled herring, sweet, sour, tangy and all that good stuff. Be sure to put a bunch of onion chunks in with each jar, they go really good with the fish! I have not turned my left over pickling solution into pickled eggs yet but I am getting close!Windy
MNHuntress
Ball (the canning jar company) also makes a great canning cookbook that gives step by step instructions. I know you can get them at Fleet Farm but I bet other places have them too

delcecchi
In addition to the Ball Blue Book, the U of Minnesota extension web site has a bunch of information on home canning. http://www.extension.umn.edu/distribution/nutrition/DJ0516.html
