Manly looking for the one that can control the temp the best. The only thing I have used is a converted fridge with charcoal and chips. MN Shutterbug Posted October 15, 2008 Share Posted October 15, 2008 I have an electric smoker, also called water smoker. The advantage is, it takes a ton less time than a charcoal smoker. Whoops, I see you were asking about gas. I didn't know they made gas smokers. Anyway, the only way to control the heat with my smoker is to put the top on cockeyed so it lets more outside air in.
