Carp make for some fantastic eating!

Ok, I'm going to put a couple of stipulations on that:

1. The carp is from clean water, preferably a lake.

2. The carp is small <5lbs, although I have had some decent ones up to 15lbs.

3. The carp is smoked, although I've had some other recipes that are pretty good too.

I just got done smoking up a small batch of carp with a simple recipe. Soak the fillets (scales on) all night in a brine/brown sugar solution. Allow fillets to dry out until they are shiny. Brush on a small amount of water/brown sugar mixture. Smoke for 3 hours in a charcole grill with apple wood. The fish I made today I'll put up against any smoked salmon or whitefish I've ever had. Yummy!

Yep, sounds like Lutefisk to me.Can't say for sure that is wasn't carp( pretty sure it wasn't),but my gramps used to love Lutefisk.Nasty stuff.I'd run away fast if someone gave me lye soaked carp to eat. sick.gif
