Yummy dinner tonite 2...

Been catching a bunch of stream trout this past week and cooked some up tonight. The fish were 13-15 inch stocked browns that I filleted but left the skin on.

I made 3 halfs one way and 3 another....

First was done "Almondene"

I sprayed a small baking dish with pam and layed the filets skin down and poured this sauce over them...

1/2 cup white wine, maybe a tad more...

1/2 stick butter

8 plain almonds chopped fairly fine

1/4 tsp lemon pepper seasoning

1/4 tsp cajun seasoning

some salt

Get a small saute pan hot - med/high, throw the almonds in for about a minute stirring them.

Now add the wine and flame it off - be carefull, your not gonna get a big "fire ball" but some flame - this will cook off the alcohol.

Add and melt the butter also add the seasonings now. Cook for another minute or two and its ready to go over the fish.

Bake at 400 till the fish flakes - prob 10 min?

The other filets I brushed with some butter and just hit them with some salt n lemon pepper then sprinkled with panko bread crumbs

Both of these are mild and let the fish flavor come through.

Sounds delicious!! Our opener was this past saturday and the streams were too fast and muddy for me. Nothing like fresh trout. I sometimes just shake them in flour and fry in butter.Yummy!!

Thats how we usually eat them - salt, pepper, flour, and then fry. Lately I have been baking them alot. My dads retired and does alot of trout fishing. He lets lots go but keeps plenty too. He's working on a week straight of hitting the streams every day with no end in sight till eye season opens. crazy.gif He refuses to let gas prices slow him down...

Tonight I baked a few filets with some J Daniels sauce I made that was tasty.

Saute some finely chopped onion, flame off a little JD, add some honey and OJ, a little cajun seasoning, pour it over the filets and bake...

That JD sauce you made sounds great! I like to grill but I baked some salmon on Sat night with an herb crust mmmm good. I tend to forget about how good baking a fish can be. Thanks for sharing.

    • If you really want to treat your wife (and yourself) with a remote operated trolling motor, the Minn Kota Ulterra is about easy as it gets.  Auto stow and deploy is pretty awesome.  You just have to turn the motor on when you go out and that the last time you have to touch it.   24V 80lb.  60 inch shaft is probably the right length for your boat.  They ain’t cheap - about $3k - but neither one of you would have to leave your seat to use it all day.
    • Wanderer, thanks for your reply. I do intend for it to be 24 volt, with a thrust of 70-80. Spot lock is a must (my wife is looking forward to not being the anchor person any more).  With my old boat we did quite a lot of pulling shad raps and hot n tots, using the trolling motor. Unlikely that we will fish in whitecaps, did plenty of that when I was younger. I also need a wireless remote, not going back to a foot pedal. We do a fair amount of bobber fishing. I don't think I will bother with a depth finder on the trolling motor. I am leaning toward moving my Garmin depth finder from my old boat to the new one, just because I am so used to it and it works well for me. I am 70 years old and kinda set in my ways...
    • Dang, new content and now answers.   First, congrats on the new boat!   My recommendation is to get the most thrust you can in 24V, assuming a boat that size isn’t running 36V.  80 might be tops?  I’m partial to MinnKota.     How do you plan to use the trolling motor is an important question too.     All weather or just nice weather?   Casting a lot or bait dragging?   Bobber or panfish fishing?   Spot lock?  Networked with depth finders?  What brand of depth finders?
