LABS4ME Posted January 11, 2008 Share Posted January 11, 2008 Bananas Foster..... MMMM MMM!Pretty easy too.Melt a 1/2 stick of butter and 1 cup of brown sugar in a frying pan on med. low heat. Once the sugar is dissolved, add 3-4 bananas that are halved and then halved again. optional - You can use a little lemon juice on the bananas so they don't brown up at all. Sprinkle a little cinnamon on them before cooking them. When the bananas are soft, remove the pan from the heat, have mixed 4 tblsp of banana liqueor and 1/4 cup of dark rum together and pour that mix into the pan. Tilt pan over burner (if gas) or light the liquid with a lighter or match and burn off the alcohol and cook until it thickens back up a bit (1 minute?). A scoop or two of ice cream in a bowl, a couple of halves of banana and spoon some sauce over the top and walla! DinkADunk Posted January 11, 2008 Share Posted January 11, 2008 A tart,The shell can be made ahead of time, the tart should be put together just before serving. A tart is three layers, the base (crust), filling, toping, so we'll go over each one seperately.For the crust, take a sheet of Puff Pastry, let it defrost till pliable (10-20 minutes), unfold it, roll out to 10x10 or so. Then cut 3/4" off of each edge and then stack it on the edge of the sheet. This will give a border to hold the filling. Using an egg wash (1 egg beaten), wash the border of pastry. In the field of the pastry [PoorWordUsage] all over with a fork. Bake at 400F for 20 minutes or until light golden brown. Let cool completely. You can do this part a day in advance.Now the filling. This can be as simple as a couple of cups of coolwhip or real heavy with heavy cream and marscapone. I like the later. Whip 1/2 c of heavy cream (whipping cream) until soft peaks and set aside. In a separate bowl take half a tub of marscapone (1/2c maybe?) near room temperature, add 1/4c sugar or splenda, some grated orange peel (1 tsp or so), 2T of Amareto (or Contreau, Kalua, etc) and then whip until well mixed. Fold the whipped cream into this mixture. At this point I like to fold in 1/4c of toasted almond slices that have been lightly crushed (crumple in the hands), or you can mix in coco, or pistacio's, whatever. Now, when you're ready to serve, spread the filling on top of the tart shell (crust) made previously.Topping.A couple of cups of Strawberries (slice in half), Rasberries, Blackberries, or Blueberries are great. Just clean and rinse and then put on top of the cream filling. Kiwi and pineapple works well too. Whatever floats your boat will work. The fruit can be mixed with some sugar or splenda, or left alone. You could even flambe the fruit if you want. I like Rasberries or Blackberries. As a final top you can sift some chocolate powder or powdered sugar on top. I like to shave some dark chocolate on top and then hit it with powdered sugar. Has anyone ever taken a dutch oven...mixed up a white cake mix and pour it in the dutch oven and then throw in a can of cherries or peaches? Throw the lid on and place coals on top.
