I guess they are hard to come by ... and its a Midwest thing to put beans in chili..but I am looking for a recipe for one without.Thanks in advance! JollyT Posted December 15, 2007 Share Posted December 15, 2007 Buy some Carrol Shelby's chili mix and follow the package.or2 lbs. ground meat. Chuck is much better than round. You need some fat.1 med. onion diced1-2 stalks celery diced2 cloves garlic chopped2 tablespoons oil3 oz. chili powder1/8-1 tsp. cayenne pepper8 oz. can tomato sauce2 1/3 cups water1/8 cup masa floursalt and pepperCook the onions garlic and celery in the oil until softadd ground meat and brownadd tomato sauce, water, chili power, cayenne (to desired heat) salt and pepper to taste cover and let simmer at least 30 minutesmix masa in 1/3 cup water and add as thickener (regular flour will work)If you like tomato chunks throw in a can instead of one cup of water. prov1900 Posted December 15, 2007 Share Posted December 15, 2007 Mickey Gilley's is good as well. Same as what Jolly T said. It is hot if you add the cayenne, but hot in a good way. I always add a can of Hormel to mine, just to thicken it up. Onions, garlic, mushrooms, etc. Mushrooms are great in chili. Mine is super thick when it is done. It will stick to your ribs.
