My brother in law recently returned from Elk hunting in CO. Now I have some roasts, chop, and burger.

Anyone out there have a good recipe for Elk?

Pretty much cook it just like beef except cook it less. Its really a lot like Buffalo in that regard, no fat so it will dry out quicker. EXCELLENT meat though...

Like lawdog said, it's a dry meat with little fat that's very similar to bison. Elk the best tasting "game" there is.
