Hammer Handle
A few years ago, I had a fish fry for my friends. I tried to cut the fish species in squares and make them look as close to as each other as possible. I then very lightly breaded them and kept species separate and had a taste test. Here are the results (in order) from best to worse (all the fish were caught early in the spring/summer):1) Walleye2) Bullhead (yes, I said Bullhead)3) Silver Sunfish4) Northern Pike5) Crappie6) Smallmouth Bass (caught in Canada)7) Brown Sunfish8) Largemouth Bass9) SuckerI had some perch too, but not enough for all the guests. It would be ranked right with the walleye. It was a tie, but not everyone got some. All the fish except for the walleye and small mouthed bass were caught from the same small, deep lake. The SM bass and walleye were caught in Canada.1-4 were the "hits" of the party. No one liked the fried sucker at all....The LM bass did poorly for the meat was very thick and "fishy". I maybe should have made thinner pieces.
Cooter
Cool stuff, thanks for posting. My favs have always been perch, gills, and eyes. Yesterday I brought home 2 perch and 2 crappies and side by side the perch were noticeably tastier and better textured(firmer).
Tom Linderholm
Interesting Hammer Handle, I have been kicking around the idea of doing something similar at one of my restaurants but with Zander vs. Walleye.I never thought the Bullhead would be on the top of the list.
