Crappie Recipes

Does anyone have any good coating recipes or other ways to cook their slabs? I like Don's Chuckwagon Onion Mix, it is a light batter,but any other recipes that anyone wants to share would be great

Good luck to all that go fishing . And may we all be safe this 03-04 ice season, The only good season is when we all return safe and dry.

I take a large storage bag and mix the following in it:

  • half a bag of Shorelunch
  • Lawrys Seasoned Salt
  • black pepper
  • a sprinkle of garlic salt
  • 6 or 7 good shakes of Molly McButter butter flavoring.

Once my oils good and hot I make sure I "season" the pan. Then I throw my fillets in the bag, give it spin, and dirty the fillets up with batter...Drop em' in rib cage down first, 2.5 minutes, flip...2.5 minutes and pull em out.

Give them another light sprinkle of Molly McButter Butter flavor when they're fresh out of the pan, mix up a little Miracle Whip and Ketch-Up sauce, and away I go. smile.gif

Mmmmm. All this talk makes me hungry.

I like to use a little Cajun Shorelunch and a little original Shoerlunch. Sometimes a little egg, milk, flour....then the fryin pan. Best meal out there in my opinion. Nothing like going out on the hard water and bringing back a fresh batch of crappie filets for pan smile.gif

Wow! some intresting recipes so far, Im going nutts now, I gotta get some fresh slabs and get em in the pan.. I say that we try all the recipes posted and vote the best of the year at ice out.

I'll have to hag my hat on Crappie Scampi.
In the oven, under the broiler or in foil by the camp fire.
Butter
Fresh pressed garlic
Salt/Pepper
A shave or two of fresh Parmesan
10 minutes +/- and enjoy!

I think that you all need to stop! I have already burned through what crappie's I had left and now I have will have to rely on my skills to catch some more. I sure hope I don't go hungry.

Get some batter from Jason Boser, on the Grand Rapids sight I believe it is called fishing fever if I wasnt stuck at work I would get the exact name, I bought 4 bags from him and it is very good I am about to place another order.adam

Two of my favorite's, great for all fish.
* Egg & Corn Flake Crumbs. You can buy crumbs by the box.
* Egg & Instant Potatoes. You will need to crush them a little finer.

If you want dip in Tartar Sauce, Mayo or creamy Horseradish mmmmmmmm!!

Here's one I just made last night:

Salt, Pepper, and flour your crappies.

Melt a shallow (1/4 inch or so if fillets, 1/2 inch if gutted.) layer of butter in a saute pan. Add 4 cloves of chopped garlic and about a TSP of marjoram.

Brown both sides of the crappies in the butter for a couple of minutes over medium heat.

Add 1 1/2 TBSP of lemon juice, cover, and simmer over low heat for 5 minutes if fillets, 10 minutes if gutted.

Pour the juices over the fish when served.

I have to second Lunker, Those cornmeal crappies are like candy to a baby. I have also crushed saltine crackers and mixed in about a teaspoon of tony sacheres creole seasoning, dip them first in a whipped egg and roll them into the batter, um um good! Was wondering if anyone has ever tried buggles? I think I'm going to try that next time I fry some panfish.

I have tryed them all and still go back to the original Hungry Jack pancake flour in the blue box (not the instant) just pat the fillets dry with a paper towel and dredge in the flour and fry, sprinkle with either lemon pepper or just salt and pepper. grin.gif

Try these recipes...
Main dish

I'm Coconut for crappies...

1 tsp. chili powder
1/4 tsp. black pepper
1/4 tsp. garlic powder
1/4 tsp. dry mustard
1 cup seasoned bread crumbs
1 cup coconut
1 cup seasoned flour (flour,2 tsp.lowrys salt
1/8 tsp. pepper)

Egg wash (2 eggs, 1/4 cup milk, 2 tblsp
honey)

Mix chili powder, pepper, garlic powder, dry mustard, and seasoned flour in pie plate.

Mix bread crumbs and coconut in another pie plate.

Mix egg wash in bowl

Dredge fillets in flour, dip in egg mix, let excess drip off, roll fillets in coconut mixture till coated. Fry in pan w/ veg. oil and small amount of butter heated to 375. Fry till Golden...remove to paper towel, add small amount of salt and cinnamon to fillets immediatley after taking out of pan. serve w/ orange marmalade or eat like they are....yum

Soup

Crappie chowder

5 slices bacon
1/2 cup onion
1/2 cup chopped carrot
1/4 cup chopped celery
5-6 crappie fillets (cut into 1" pieces)
4-5 red potatos peeled, cut into 1/2" cubes
1 cup water
1/2 tsp salt
1/4 tsp pepper
1 16oz. evap. milk
1 16oz. cream style corn
1 can chopped clams

in dutch oven or large pot

put potatoes in pot w/ just enough water to cover...boil till tender. drain

Cook bacon in pot till crispy. Set aside. Leave small amount (2tblsp) drippings in pot.

Add onion, carrot, and celery to drippings and cook on Med. heat till tender, stirring constantly. Add crappie, clams, potatoes, water, salt and pepper. Bring to boil over med-high heat. Reduce heat to low, simmer covered for 8-10 minutes till fish is firm and opaque and begins to flake.

Blend in milk and corn. Cook over med. heat (do not boil or scorch) about 7-10 minutes until mixture is hot, stirring occasionally. Keep warm on low - med/low till serving. Crumble bacon on top of each serving. Enjoy w/ fresh croissants or bread sticks.

A bottle of Fetzer guertztraminer (or any favorite wine, save the PBR for the lake), a nice salad and baked potatoe to go w/ above and you're in like flint, guaranteed! The Mrs. will let you fish whenever you want!

Sounds like some pretty good eats out there! Here is one more for you. I like to use a beer batter mix, now whats not to like, it has BEER in it!

1 cup Flour
Can O'Beer (one for you and one for the mix)
1 egg
Salt & Pepper

mix together in a bowl, you can add more beer or flour depending on how thick you like your batter. Dry your filets on a towel and dip in batter and fry in oil, yummy in the tummy! Works great for fresh onion rings too. Enjoy.

No Silverlakeboy...I'm not from the south..oh wait..yes i am...I'm from a place south of Two Harbor's called Duluth,and raised in the western subs of mpls.
i like to fish all over the country for my favorite fish the"Crappie".
I don't like grits so i don't use them in my recipes,however i love to cook.So i'm sharing my favorite recipes with FMer's.Hope you like them,I do...and if i come across anymore...why not share?
Truthfully, i really have about 15 more recipes i could share with yah....!?

    • Chamois passed away this weekend a couple days short of her 13th bday. What a great dog to hang out with here at home and on distant adventures. Gonna miss ya big time my little big girl.

    • If you really want to treat your wife (and yourself) with a remote operated trolling motor, the Minn Kota Ulterra is about easy as it gets.  Auto stow and deploy is pretty awesome.  You just have to turn the motor on when you go out and that the last time you have to touch it.   24V 80lb.  60 inch shaft is probably the right length for your boat.  They ain’t cheap - about $3k - but neither one of you would have to leave your seat to use it all day.
    • Wanderer, thanks for your reply. I do intend for it to be 24 volt, with a thrust of 70-80. Spot lock is a must (my wife is looking forward to not being the anchor person any more).  With my old boat we did quite a lot of pulling shad raps and hot n tots, using the trolling motor. Unlikely that we will fish in whitecaps, did plenty of that when I was younger. I also need a wireless remote, not going back to a foot pedal. We do a fair amount of bobber fishing. I don't think I will bother with a depth finder on the trolling motor. I am leaning toward moving my Garmin depth finder from my old boat to the new one, just because I am so used to it and it works well for me. I am 70 years old and kinda set in my ways...
    • Dang, new content and now answers.   First, congrats on the new boat!   My recommendation is to get the most thrust you can in 24V, assuming a boat that size isn’t running 36V.  80 might be tops?  I’m partial to MinnKota.     How do you plan to use the trolling motor is an important question too.     All weather or just nice weather?   Casting a lot or bait dragging?   Bobber or panfish fishing?   Spot lock?  Networked with depth finders?  What brand of depth finders?
    • We have bought a new boat, which we will be picking up this spring. It is an Alumacraft Competitor 165 sport with a 90 horse Yamaha motor. I will be buying and installing a trolling motor,  wondering if I can get some recommendations on what pound thrust I will want for this boat?  Also, I will be selling my old boat, is there a good way to determine the value on an older boat ( mid-80's with a 75 horse 2-stroke  Mariner motor)  I will appreciate any help with these questions.
