What would you recommend?

I'm looking for some kind of lightweight, small boat, with no motor, that fits in/on a S10 Blazer.

I would like to be able to pull up on a small local lake, and carry it sometimes up to 1 mile and just row out from shore to make a few casts.

Was wondering also If maybe inflateable would be the way to go?

You could try a float tube? (The ones you sit in and fish out of... not the ones you lie in and float down the river in drinking your favorite beverage ) I know several people who use those and wouldn't have it any other way...

Matt has a great idea and I will just piggy back a little more onto this. A float tube is a very popular way to fish when you are looking a small lakes. Stop into a fly-fishing shop or a Gander Mountain and let em' know you are looking at different types of float tubes. Very easy to move around in. All you do is get yourself some flippers and you are in business!

Very lite weight to carry around with and would fit in your blazer with no problems.

Float tube all the way!! THey work great. I have my wife drop me 3 miles from my home and I float cast the whole river all the way down to my truck it @#$%^&&&& RULES!!!!! Sometimes I catch upwards of 30 eyes!!!! Great buy!!!

kevlar canoe - 17 footer only weighs 40lbs!

Or an Alumacraft 1032 Jon Boat - 95 lbs and would probably fit in the back of your pick-up

The other guys were big on the tubes so I figured I would put a plug in for some boats.

There is a place in Brainard that makes small fishing keyaks. The float tubes are great if you don't have to move far or you are floating with a current. It may just be me but I can not move my tube enough even with flippers. I would go with the keyak.

I like my kayak, but would not carry it a mile. However, it is easy to paddle a mile or much more. If you are planning on fishing lakes, I'd go with a kayak over a float tube.

I would say single person canoe. I like the float tube idea however, I see that you are in the metro, and they don't do too well in heavy weed growth. You won't get too far in heavy milfoil.

Canoe; they are light, easy to move around in and can be easily set up with a small trolling motor and electronics(if that's your bag). I installed lightweight, removable rod holders for trolling, a rope cleat system for anchoring and use a portable Eagle graph on my Old Town. The whole rig is about 70lbs and is very fun to fish out of.

Ditto the canoe. You can also buy portage wheels that handle most terrain making it very easy to haul the fully loaded canoe a mile or so. Just launch and go. I had this canoe setup with the trolling motor etc. Worked great.
