OUTDOORNUT Posted December 27, 2005 Share Posted December 27, 2005 Use it like you would Chicken, works great for any recipe that uses the barn bird.My favorite is to cut the breast into strips, roll in some Fry Magic and pan fry with a little oil. My 6 year old refers to this meals as Grouse Fingers. Cooking on low heat and not over cooking is always a must with any wild game meat. Link to comment Share on other sites More sharing options...

FOOT Posted December 28, 2005 Share Posted December 28, 2005 Butter a sheet of tin foil (one for each WHOLE grouse).Add thick slicies of onion.Place each grouse on the onion.Sprinkle with Lawry's Season Salt, Garlic and pepper. You can also use Lemon Pepper if you choose.Seal tin foil.Bake for 60 minutes at 325 or cook on grill.The grouse will come out moist (from the water in the onion) and you won't have to use bacon, that's better w/ eggs anyway. What doesn't go good with bacon? I almost forgot about a killer Rumaci recipe (use for duck, goose, pheasant or grouse) chunk meat into 2x2 cubes marinate in equal parts Soy and apple juice (12-24 hours) wrap each cube with enough bacon to cover the cube and secure with toothpick. I add banana peppers and water chestnuts between the bacon and meat of choice. Grill on medium until bacon is ALMOST crispy.....and serve. They make great appetizers for any event. Your mayor is supposed to be on the wagon now so he can't outdrink anyone!Here's a couple simple recipes I use.Fried Grouse/Phez Fingers...Fillet the breasts off and cut lengthwise into strips. Create an egg/milk mixture and season some flour with salt & pepper.Dice a bunch of onions and saute in oil. Dredge the strips in the egg/milk mixture and then in the flour and fry with the onions still in the pan.You end up with grouse/phez fingers with crunchy onions stuck to them. To kick it up ala Emeril just add some cayenne pepper to the flour. You can also use corn meal or fish breading instead of flour.Grouse/Phez Rollups on the grill...Fillet the breasts off and pound them flat until they are about 1/4" thick.Put chopped onion (or other veggies) on the meat and roll the it up so the onion is on the inside.Then wrap with bacon and secure with toothpicks so it doesn't unroll.Grill until done. However, I think it gives wildgame (ducks, geese, upland birds) the taste of bacon and I would rather enjoy the taste of the specific bird instead. I use very little seasoning on my birds.But you right bacon goes good with anything and you can't beat a toasted BLT or bacon & eggs. In fact I once gave 3 pounds of thick cut Amana bacon to an auctioneer who was helping us with a charity event. He loved it. We cooked some up and everyone enjoyed.
