I like to use 1/2 saltine crackers, 1/4 flour and 1/4 yellow corn meal. and when I fry fish I always put in a scoop of butter flavor crisco into the oil. How do you do it?? Am I the only one who uses Baking Powder in their mix?My batter of choice is:- Flour- Baking Powder- Season to taste (Salt, Pepper, Lemon pepper, Cajun whatever)- Eggs- BeerPut in a Bowl all the dry ingredientsCrack an egg, or two, over the topMix wellAdd beer and stir to the consistency you like. Makes the batter too thick and I really like a thin coating of batter on my fish(More room for fish in my tummy). But if your trying the stretch the fish you have or like thicker breading it's a great option. Also, Sam's club has the Old Bay seasoning in big jars for the same price as the little ones elsewhere. metro 1 Posted October 31, 2005 Share Posted October 31, 2005 I'll use potato buds and grind them a bit finer than the flakes .1 or 2 cups buds and then throw in 5 or so saltine crackers some ground pepper and garlic powder to taste. in the bowl I use the bottom of a glass and grind to a corn meal consistency.
