Pickled Fish Recipes ??

I have pickled fish quit a bit, there are recipes posted in the recipes foram, have to do a search, I like the ones with wine in them. If your worried about parisites or those little worms that are in some fish , freeze them for a few days first.

Here ya go. Got this from a friend a couple years ago. mmmm, gooooood.

6 lbs. fish cut in one inch pieces, bones in

1 quart white vinegar. (only white vinegar)

1 cup canning salt. (only canning salt)

Place fish in ice cream bucket. Don't use metal! Combine vinegar and salt. Stir a while till salt dissolves. Pour over fish a put in the fridge for 6 days. Stir occasionally. After 6 days dump brine and rinse in cold water.

Spice mixture:

1 quart white vinegar

4 cup sugar

1 tablespoon pickling spice.

Combine these 3 and bring to boil, then cool in fridge.

Pour over fish and add a couple or 3 medium onions cut up.

Let stand 3 days.

Eat, mmmmmmmmmmm. enjoy!

Here is the recipe I've used many times.

Pickled Fish

Ingredients:

Fillet fish and cut into strips about 1" wide. Pack Loosely into quart jars until about 3/4 full. Add to each jar the following:

2 to 2 1/2 tsp. of salt

1/4 cup sugar

2 tsp. pickling spices

1 to 2 medium onions finely sliced

Directions:

Top off jars with white vinegar and refrig for a week or so. Depending on thickness of the fillets.

I usually only make 3 or 4 jars and it's gone in a few weeks.

yeah, check out a search for some good recipes. the only info i'd add is to lengthen the time of soaking in vinegar if you have thicker pieces (over 1/4" thk). ad an extra 2 hours or so.

also, i throw in sliced jalapeno peppers (with seeds), pepper juice, red pepper flakes to add a nice kick to the fish. it is awesome!

ps.. i've never tried pickling eyes, but have done perch and they turned out well.

Icerat, if you do a search, check for a recipe provided by Coldone.

I have used this or a variation of it several times with great results.

Just about any white flesh fish is good pickled.

Frozen is actually preferable, since freezing kills any parasites in the flesh.
