I'm hoping it will make it through the summer, so I won't need to smoke any until fall. It seems to disappear pretty fast though, same as the Canadian bacon. This was another pops brine. Really, the only difference is cold smoke for the normal bacon and 225 plus smoke for the cb until it gets to 160. Same brine for both- pops brine from RHs page. There's a bunch of different rubs or brine you could use for either, but pops brine is dang good for either!!! There's a little less mass with the belly though, so I've had to double the brine recipe both times for normal bacon.
