Was skeptical about the casings, take them off after the smoke. They are awesome, real easy directions. They solicited 383 pages of recipes from our family...4 siblings in my dad's family and they had 4 different potato sausage recipes and one from grandma for a total of 5 potato sausage recipes all fairly similar. A cool aside...that photo is of the house my grandpa grew up in in Sweden. The black and white photo from the 1920's or so always hung in our house. When my sister went to print the photo for the cookbook she attempted to "colorize" it and those nice red flowers suddenly appeared and the bright green grass.
