Just an fyi, i did some this past weekend.  used the kit from (the 3 stooges), larry, moe and the last one... hint.  Was skeptical about the casings, take them off after the smoke.  They are awesome, real easy directions.  I had 1.75 dollars per pound, plus time...  but thats fun time.

Made the same dogs from Curley's.  Just got the seasonings and not the kit.  Great stuff.  I make them primarily for the grandkids.  Don't like the junk they make that you buy in the stores.  They love them.  good luck.

our favorite butcher shop makes the BEST  hot dogs. they have actually won several awards at the state fair for some of there meats like sausage, etc.

 

yea reiny some of the dump ya buy in the store I hesitate to feed to my hounds!!!!

Nothing like those old fashion butcher shops!!!  They take pride in what they do.  Going to make some Swedish Sausage this week.  Trying to replicate the Swede's they made there when I was working there back in the 70's.  good luck.

RH-  some industrious females in our family compiled this a few years ago.  They solicited 383 pages of recipes from our family...4 siblings in my dad's family and they had 4 different potato sausage recipes and one from grandma for a total of 5 potato sausage recipes all fairly similar.  

A cool aside...that photo is of the house my grandpa grew up in in Sweden.  The black and white photo from the 1920's or so always hung in our house.  When my sister went to print the photo for the cookbook she attempted to "colorize" it and those nice red flowers suddenly appeared and the bright green grass.  In the black and white they aren't even noticed.
