Hoffer Posted February 13, 2014 Share Posted February 13, 2014 A few weeks back I smoked up some giant turkey legs.BEST ever!!The only problem was that I didnt make enough:)Soaked them overnight in a very simple sugar and salt brine.Then mixed up a 5 seasoning rub with cumin, onion powder, pepper, garlic salt and paprika.Smoked them on low heat at 200 degrees for around 3 hours...adding chips as I went along and then turned the heat up higher to 250 and finsihed them for just under 2 hours on that heat to firm up the skin. Cashwise here gets hen legs in 30 pound boxes and you can buy just part if you want. They are not monsters and they work great. Sounds great Hoffer ! The recipe from 3rd eye takes longer but it is fantastic. I did 6 more and took the meat up to LOW 3 days ago and the group loved it. Hoffer Posted February 15, 2014 Author Share Posted February 15, 2014 I usually have trouble finding them in "regular" retail grocery stores like Rainbow or Cub. I find mine in Lunds or Byerlys. The problem there is that they are also more expensive. I think the 2 I cooked up were 8 bucks (4 bucks each). Thats a lot per pound. But then again these were pretty large. Heres a pic.
