thirdeye Posted January 14, 2014 Share Posted January 14, 2014 I'm not a good resource for pre-made mixes.... I just follow recipes and mix my own seasonings. Frankly the pre-made mixes I've tried are often too salty and don't seem to have as "crisp" of a flavor as you get with fresh spices, in the amounts that you like. Some of my recipes also call for fresh garlic or onion which adds great flavor, and also moistness.What types of sausage do you like? Breakfast, Polish, German, Hot Links? What defines a "summer sausage" as opposed to a "breakfast sausage" or other? Sausage is sausage as far as I'm concerned. Summer sausage contains cured (or sometimes fermented) meat, is usually stuffed into larger diameter collagen casings (the brown colored ones) and can be dried, smoked, baked, or even poached. Many recipes produce a product that is stable without refrigeration. Summer sausage is usually an option if you use a processor for wild game. And sometimes butcher shops will have it along with snack sticks for a little variety. Hickory Farms has some varieties of summer sausage in various length chubs.
