Dice,

Here is what you are looking for. Turns out awesome. I slice it thin and use for sammies and they disappear!

Smoked venison:

1 cup of Tender Quick

1 gallon of water (use bottled spring water not tap)

2 tsp crushed garlic

1 tblsp black pepper

1 tsp crushed red pepper

1 tsp liquid smoke

If you like it spicy... Add 2 sliced jalepeno peppers

Boil all till tender quick is fully dissolved. Let completely cool

Put in glass or plastic container or 2 gallon zip lock bag. Place meat in brine

Let sit in brine 7-10 days turning at least twice a day.

Rinse meat under cold water. Let sit for 1 hour at room temp

Smoke 4-6 hours

If needed place in oven till thermometer reaches 170 degrees

Slice thin and enjoy!
