I made the first test batch today, 45 min. At 150........ Not a dark color, will go for an hour next time and use all hickory for the fourth of July. The piercing of the egg shell did not, I repeat, DID NOT center the yoke

I seen a trick on centering the yolk on food network. They took the eggs and turned them bottom side up 24 hrs. before they boiled them. I have not tried this but it sounds logical.

don't worry about where the yolk is... LOL just smoke em and enjoy!! cherry will give you a darker color.
