REA Posted September 24, 2002 Share Posted September 24, 2002 Any ideas on cooking the ducks I shoot this weekend? I put `em in a crock pot in gravy and inject orange juice with a needle. Fisher Dave Posted September 24, 2002 Share Posted September 24, 2002 I like to stuff them with apple & onion and bake them until their done .. easy and taste great .. just dont eat the stuffing. Hoyter Posted September 25, 2002 Share Posted September 25, 2002 Breast out the ducks. Butterfly cut the breasts and fill them with chopped jalepenos and green olives (sounds funky, tastes great). doubleUcubed Posted September 25, 2002 Share Posted September 25, 2002 Friends of mine stuff them with onions, apples and carrots, rub them down with seasoned salt and pepper and finish by wrapping them with a couple strips of bacon! Wrap in a couple layers of tin foil and put on the grill turning them several times until done (usually they become soft to the feel). Season the breasts well and wrap in bacon (the thicker bacon the better) and hold the bacon with toothpicks. Grill until completely done. It's awesome....! Guest Posted September 25, 2002 Share Posted September 25, 2002 I learned this trick a while ago, and it really works for my sensitive taste of wild game.....soak the meat in Coca-Cola overnight. The phosphoric acid in the cola takes that wild game taste right out of the meat (at least for me).Then marinade the meat in whatever you like. The previous recommendations sound great! I cut the breasts into 1" cubes wrap with 1/2 slice bacon toss em on the grill, when the bacon's done their done. GullGuide Posted September 26, 2002 Share Posted September 26, 2002 The bacon and toothpick idea is one I've used for years now...AWESOME...I'll stick a slice of Jalepeno in between the bacon and cube...I'll also marinate the cubes in whatever for a day as well.Another way I have found to really make em tase good is to roast them in one of those oven bags. Throw in some celery, carrots and onions and season em up good. When they are done cooking, throw out the veggies (they soak up the game taste) and enjoy your duck. It doesn't hurt to have some ribs above them so the juice drips down on the duck either. Had some big corn fed mallards this way last year, and I can honestly say it was great. We've tried orange juice, 7-up, italian dressing, and even wine as marinades and they all turned out great. Another option is to soak them overnight in teriaki marinade and the make kabobs with green peppers and onions. Dip into a mixture of flour, lowery's seasoning salt, celery salt, onion and garlic powder. 3. Fry them until golden brown.4. Try this: filet breast meat from the bone, wrap with bacon and toothpicks (yes the toothpicks do burn a little, but it's ok.) then put them in a reynolds cooking bag. Pour Zesty Italian salad dressing over them and bake in ove for 40 minutes or so on 350. sometimes I remove them from the bag and broil them for 10 minutes to crisp up the bacon. bmc Posted October 5, 2002 Share Posted October 5, 2002 Man, this is just what i've been looking for....duck recipes. my buddy and i shot a blue wing teal, green wing teal, and a shovler last tuesday and i filleted the breast off and marinated them in the fridge overnight in teriyaki sauce and grilled them the next day. They tasted pretty good especially with the wild rice and mushroom hot dish we had. Keep those recipes coming, as for the duck hunting up here around Deer River, MN; it's been average i would say so far. Mainly seeing alot of teal and ringnecks, been hearing the mallards when we're setting up the decoys, but haven't seen 'em flying when shooting time starts. It can only get better i would think.
