pickled fish

anybody know what makes the pickled fish become mushy after about 2 1/2 weeks.

They were fine at about day 10 and now mushy????????????

the only thing i can think of is that you may not have let the brine cool off completly before adding it to the fish. warm brine will make the fish mushy. good luck.

I have only had that problem when trying to pickle it in the jars.The fish is packed in to tight.Since I started pickleing it in a large container then putting it in jars after....no problem.

Sounds like a great idea! Most of the time I pickle fish the last jar is never quite full. With your plan I can just eat the leftovers! Thanks!
