reinhard1 Posted July 4, 2012 Share Posted July 4, 2012 As we celebrate the birthday of our great Nation and honor all of our Troops who give us our freedom daily, lets also get that grill/smoker going today for a fantastic meal. i've got so many ribs on hand i chose chicken today . going to split a couple today, put some rub on and later mop them with my ketchup/western salad dressing/apple juice sauce. going to make those deviled eggs in the smoked eggs thread and some Asian Noodle Salad [which i'll put in the Time for Summer Salad Recipe thread]. so happy 4th everyone and stay cool. good luck. Leaky Posted July 5, 2012 Share Posted July 5, 2012 So RH, How'd the meal turn out? I need to try that mop sauce. Sounds like it would be great on chicken. Do you wait until the skin crisps up a bit before putting it on or keep moppin right from the start? Did you do them in the smoker or on the grill? reinhard1 Posted July 5, 2012 Author Share Posted July 5, 2012 didn't get a chance to take a picture. i took the chicken and set it on it's back and cut from the breast strait in the middle till i got to the backbone and butterflly'd it. seasoned it and put it breast side down on indirect heat for an hour and then tured it over and put the sauce on. left it another hour and turned it over again and sauced the other side. then fliped it every 5 minutes and mopped it each time until done. the salad was good and so where the deviled eggs.like i said before about the mop sauce. it was given to me by a retired meat cutter years ago. it was so simple i didn't think much of it. but i use it now most of the time. i did the chicken on my Char-Griller barrel with the fir box.one third western dressing [i use the western dressing with the bacon flavor]one third ketchupone third apple juicei put it in a pan and let it simmer a little while stirring. when hot i bring it outside and start moping away as i said above.when i do ribs i like to useone third western dressing like aboveone third ketchupand 1/4 cup apple juiceand 1/4 cup brandyi also spray the ribs with a 1/2 cup apple juice and 1/4 cup brandy mix in my spray bottle while in the unwrapped mode. good luck.
