Dried Venison or Chipped Beef looking for recipes

Recommended Posts

I have alot of dried venison on hand. If you don't know what that is it's like the Armor dried beef you get in the jar. I'm looking for recipes to use this stuff with besides appetizers or SOS. Reinhard any suggestions? Anybody else?

Just a few ideas would be to use it soups like potato, split pea, or cheese. Would also lend itself well in a cheesy, noodlely type casserole or similarly in a carbonara/alfredo type sauce tossed with mushrooms over bowtie/farfalle noodles. Think it would be great in an enchilada with black beans or in nachos. Breakfast foods like omelettes, in a gravy over biscuits, or chipped venison hash. Would also use it on salads like you would bacon bits or in a slalad with a blue cheese dressing with something like roasted beets and onions. Bet a grilled cheese or panini type sandwich, or VLTwich would also be good. Could cook it up with some sour kraut as a side dish or better yet add more and make a reuben type thingy. Bet it would be good in baked beans. Heck, give it a shot in sloppy joes or pizza. Just thought of putting it in a chili and serving it cincinnati style over spaghetti noodles topped with cheese, sour cream, and onions!!! Bring on the Iron Chef.......for dessert options ......bacon cookies were all the rage this year and could just substitute ......also suppose it could also be used in an ice cream or sorbet smile

those are sure a lot of ideas!!! i found this recipe here:

Chipped Beef [or venison] and Asparagus

1 pound asparagus

2 tbls finely chopped onion

4 ounces dried beef [venison] shredded

3 tbls butter

1 tbls flour

2 cups milk

1/2 cup shredded cheddar cheese

2 tbls chopped pimiento

toast cups [trim crusts from thinly sliced bread; spread with butter. press buttered side down into muffin cups. bake 12 minutes or until lightly toasted.]

cook asparagus in boiling salted water until tender. drain. cook and stir onion and beef in butter until onion is tender. remove from heat. blend in flour. cook over low heat, stirring until mixture is bubbly. remove from heat and stir in milk. heat to boiling stirring constantly. boil one minute. stir in cheese, asparagus, and pimiento, heat through. serve in toast cups or over corn bread. good luck.
