Rabbit Recipe?

I don't think rabbit would lend itself to grilling very well. Its a meat better suited to braising, especially wild rabbit. This is a recipe RH posted on the Wild Game Thread. I've made it this way in the past and turned out great.

SIMPLE RABBIT MEAL

3 to 4 rabbits, cut into pieces

salt and pepper

flour

5 large potatoes

1 pound of carrots, cut in large chunks

2 onions, cut in chunks

1 envelope of onion soup mix

1 can cream of onion soup

1/2 cup white wine

water

salt and pepper rabbit pieces. dredge in flour and fry in hot oil until browned. arrange pieces in large baking pan. scatter potato and carrot chunks around rabbit. cover with onion chunks. mix dry onion soup mix with canned soup in 3 cup measure. add wine and enough water to measure 3 cups. pour over rabbit. cover with foil and bake at 350 degrees for 2 hours. remove foil last 1/2 hour of baking. good luck.

We raised rabbits when I was a kid and the tame rabbit was alot more tender than wild. Like stated above wild rabbit you will want to cook it slow to tender it up. The tame rabbit you could just dip it in flour and fry.

It was actually pretty good! Tastes like chicken.:D I fried it in a cast iron with some butter and then added some wine. It was a little chewier than turkey. For the price though, I'd rather have a fillet with some bacon wrapped around it.

We've had cook luck combo-cooking rabbits we get in the wild. Rub you rabbits in olive oil and season to taste (I like garlic powder, onion powder, seasoned salt and cayenne), then grill over medium hot coals to get a good sear and some smoke flavor. Finish them off in the crock-pot until they are good and tender (throw in a cup of beef or chicken stock, onions, garlic cloves, or even some white wine).
