Fazerfish Posted December 21, 2011 Share Posted December 21, 2011 Was watching 'Diner, dives and Drive-in's' the other day and one place had some awesome looking beer cheese soup...So I hit pause and got the pad of paper and did my best guesstimate on the measurements of the ingredients they threw in there, will be trying it out on Friday. This place put Raindeer sauage in, like cut up beef sticks. I don't have any of that, but I'm thinking adding fried up Porsciutto in there...Any tips or recipes out there? I'm going with Cheddar, Harvarti, and Gruyere, not sure on the beer, I'm more of a lite beer drinker, not into that heavy dark stuff, but is that better to use cooking? reinhard1 Posted December 21, 2011 Share Posted December 21, 2011 BEER CHEESE SOUP1/2 cup butter1/2 cup minced onions2/3 cup flour1 tsp dry mustard1 tsp paprika1/8 tsp cayenne pepper1 tsp salt1 10 1/4 can chicken broth4 cups milk1 12 ounce can of beer [not dark]3 cups finely shredded sharp cheddar cheese [12 ounces]melt butter in large kettle; saute onion until soft. blend in flour and seasonings; gradually stir in broth, milk and beer. cook over medium heat; stirring constantly; until mixture comes to a boil; boil and stir 1 minute. stir in cheese; heat and stir until smooth. good luck. GatorBait Posted December 21, 2011 Share Posted December 21, 2011 Beer Cheese Soup, it's pretty much a traditional everyday expectation here in Cheese and Beer capital of the World. Us neighbors usually accompany this soup with some Johnsonville Brats mixed in. Can't really go wrong. Reinhard's recipe should do you well. Definately experiment though.. Yum!
