that is another example of a great buy if you buy the whole piece vs pre packaged smaller pacs. this winter i'm going to get one and cut it into thirds and cure and smoke them for canadian bacon. good luck.

You bet, another way to triple the value of meat purchased in bulk.

Hey Jim, if you have access to Hi Mountain Jerky kits, look for Hi Mountain Buckboard Bacon mix. It turns loins into canadian bacon and butts in to a product that resembles ham. A $5 kit will process 25 pounds of meat. I highly recommend the buckboard cure.

Pretty sure L &M (Fleet Farm type Store)has that kit in stock.

Might just have to pick up one more for making up some Canadian bacon. A little apple wood smoke on the bacon should be awesome. The smoker is going to get a little work out this weekend.

OnAFly, you might want to check out Fedors Market in Moundsview. It's off the beaten path but will surprise you with the decent meats they have there. Just a few blocks west of 35w on County road I. If they don't have something you want, they can get it for you. Really nice people.

Well, you might want to shoot for next weekend... the whole process will take a week or so before you are ready to smoke it.

Third Eye, What does a chuck roll go for at Sams. I realize you're in WY and I'm in MN.I'm just trying to get a ball park. Looked into a 1/4 of beef but with the 30% loss in waste and not being able to pick my cuts I would rather buy a chuck roll or a lion and cut and wrap it myself.

Also to my MN friends. Does Cosco offer full rolls of chuck or full loins? If so does anyone know the price?

No one mentioned it, but I've found chicken to be the cheapest at Restaurant Depot by the State Fair. We eat a lot of wings and used to buy them at Sams or Super Walmart for $1.80-$2.00/lb. It's way more expensive at Cub and Rainbow. RD had 40 lb cases at $0.99/lb. all summer (small or jumbo). The price went up to $1.18 a couple weeks ago. They sell cases of other chicken as well.

When I have big parties, I'll pick up a roll of NY strip there, too. Those are at $5.70/lb now for select. They have higher cuts as well for more money and better pricing by the case. Thy sell chuck rolls, too, and I want to say they're in the low $2ish/lb. I'll double check next time I go there.

BTW, RD is for businesses only. Just need to have some type of license to get a FREE membership. Does NOT have to be a restaurant license. My dad has a medical license and that's what I used. wink

Chuck roll at my Sam's is around $3.15/lb for a single one (22 to 24 lbs) Case price is cheaper. Beef is really high right now, they usually come in closer to $2.75/lb

usualy when chuck roasts are on sale, the store marks down the chuck eys as well. they are the only steak i eat year around. sometimes a porterhouse when there is a good sale on. but chuckeys at regular price are a good bargain. right now they are anywhere from 4.99 to 5.49 that i have noticed. ribeys are over 10 bucks a pound normaly. and the chuck eye is next to the rib eye. next time i'm at sam's i'm going to ask them if they would concider selling just the whole chuckeye.

during the summer the county market store here in andover sold the whole chuckeye roll vacumed sealed for 2.89 per pound. bought a few of those. i tie two together and roast them instead of prime rib. the chuck eye is located on the narrow end of the chuckroll in that picture. the other end being the neck area. good luck.

Chuck eyes have become my favorite steak over the past couple years.

In the picture of the chuck roll, where do the chuck eyes come from? I believe there's one or two per chuck.

Being boneless, it's hard to navigate a chuck roll without the blade bone in there, but here is photo that shows the eye roast and the under-blade roast. If you want eye steaks, just remove the entire eye roast (it has several muscles) and trim to your liking following the natural seams, before slicing steaks from it. You might want to only keep the largest muscle for steaks. The close-up shot shows all of the muscles.
