JimBuck Posted September 6, 2011 Share Posted September 6, 2011 With goose opener this past weekend I had a chance to finally put the dehydrator to use for the first time. I ended up making 3lbs. of Goose jerky and it turned out great! I had some family over for the holiday (many of whom aren't too fond of wild game) and they ended up going home with a few bags of jerky. I'm curious what others like to use for a jerky recipe. Jerky Recipe 3 pounds of ground goose breast 1 pound of ground beef (85/15) 1/4 cup and 2 tablespoons soy sauce 3 tablespoons Worcestershire sauce 3 tablespoons liquid smoke 3 tablespoons brown sugar 1 tablespoon salt 1-1/2 teaspoons ground black pepper 1-1/2 teaspoons meat tenderizer 1-1/2 teaspoons garlic powder 1-1/2 teaspoons onion powder 1-1/2 teaspoons paprika 1. Cube breasts and let them soak in salt/water mixture for 2 days changing the water out a few times. 2. Combine ground beef and ground goose together in a large mixing bowl and mix thoroughly. 3. Add ingredients and mix it well. Cool in fridge overnight or for 24 hours. 4. Toss mixture into a Jerky gun and fill the dehydrator trays up. 5. Dehydrate at 160 for 4 hours and let cool for an hour. reinhard1 Posted September 6, 2011 Share Posted September 6, 2011 thanks for the recepie. i have never had goose jerky. a neighbor wants me to make some goose kielbasa for he says he always gets a lot of geese. i'll have to ask him for 3 pounds to make some jerky. good luck.
